Rockin' Recipes '22

'Too Hot to Cook' Chicken Waldorf Salad

Don't Fire Up the Oven! Bring out your best knife. We have it from good authority, this was Jerry Lee Lewis' favorite. In fact, the actual name of the song was "Whole Lotta Chicken Goin' On" until Sam Phillips at Sun Records made him change it.

INGREDIENTS:

 1/5 cup chopped walnuts

2-3 cups rotisserie chicken breasts, shredded or cubed

1 cup seedless red or green grapes

1/2 cup dried cranberries

1 diced apple (we like Granny Smith)

1/4 + cup chopped red onion

1/2 cup mayonnaise

1/2 cup plain yogurt

2 tbslp Dijon mustard

3 tsp lemon juice


 

STEPS:

1. Toast walnuts on a tray in toaster oven or in a pan until they are fragrant and browned. 3-5 minutes.

2. Lightly toss chicken, grapes, cranberries, apple, walnuts and onion in a salad bowl.

3. Whisk mayo, yogurt, lemon juice and Dijon in a separate bowl.

4. Pour dressing over salad, toss to thoroughly coat. 

5. Refrigerate for an hour. 


Cheeseburger in Paradise

We would be remiss if we didn’t include Jimmy Buffett’s Cheeseburger in Paradise on Rockin’ Recipes ’22.

  

Regardless of whether you remain 'pc' by including meatless patties or you go with turkey, bison or beef, sometimes you just gotta go for the gusto. So we've dissected Jimmy's lyrics and voila, here it is. 


INGREDIENTS:

* patty or two of your choice (8-12 oz.)   preferably on the bar-b, but pan fried or broiled is fine, medium rare

* onion slice (red)

* muenster cheese ("would be so nice") 

* lettuce

* tomato 

* French fried potatoes 

* big kosher pickle

* Heinz 57 

* cold draft beer (of your choice) 

* brioche bun


We like a little bread crumbs, maybe an egg, and either Worcestershire or A1 sauce mixed into the meat to keep it from falling apart. 


Of course you may have your own favorite composition including sauteed mushrooms, Dijon mustard, avocado, bacon, cheddar or other cheeses. Keep building and you’ll need a step ladder.  




Was This Dish The Inspiration for Bruce's "Hungry Heart"?

We're told by some musical friends of ours back east that the boss drew heavy inspiration from this hearty pasta dish before and after gigs when he wrote "Hungry Heart": Rigatoni with Garlicky Spinach, Pesto and Buttered Pistachios. True? Only Bruce can tell us.

INGREDIENTS:

12 oz. Rigatoni

4 tblsp butter

.5 cup pistachios 

6-8 minced or smashed cloves of garlic

2 tblsp capers

3 tblsp pesto

12 oz. spinach, stems trimmed to 1"

grated Parmesan

STEPS:

1. Cook Pasta

2. Two minutes after pasta has been cooking, add pistachios, garlic & capers in melted butter in a big pan. Don't burn garlic. Stir frequently.

3. Add spinach, one handful at a time until just wilted.

Add cooked pasta with .5 cups of pasta water. Add pesto.

4. Serve with Parmesan. Sing loud: "Got a wife & kids in Baltimore, Jack..."
